W.I.A.W: Beach Edition!

Hi guys! Happy Wednesday! :)

This past weekend, Bobby and I decided to head down to the beach for some relaxation and quality time, so I decided to switch things up a bit and document my Saturday eats for you (via Instagram)! Thanks to Jenn at Peas and Crayons for hosting the famous What I Ate Wednesday! ;) Head on over to check out some great blogs!

Jenn dubbed this month “Sensible Snacking” month, and that was perfect for my Saturday, because I feel like that was all I did throughout the day!

8:00 a.m. – Breakfast

Kombucha and Oat Bran Pancakes (unpictured, you’ve seen them the past few weeks ;) )

11:30 a.m. – Snack#1

1:30 p.m. – Lunch

I packed this salad on a whim, and boy am I glad I did! It was so good. I marinated some Kale with a little olive oil, lemon juice, and salt & pepper. Then I topped it with edemame, cherry tomatoes and cucumbers. So fresh and tasty!

At around 4:00, we had our fill of the sun, so Bobby suggested we start crossing things off my Summer Bucket List right away! I thought it sounded like the perfect idea, so with sandy feet, we threw on our cover ups and headed to Off The Hook for a cocktail and a snack!

4:30 (ish) – Snack(s) #2

I ordered white wine with ice and club soda while Bobby sipped on a beer. We also ordered shrimp cocktail (for me), and some spicy wings (for him). We had a great time sitting by the water enjoying our snacks!

We got back up to Hoboken around 6, and both of us were feeling very indecisive about what to do for dinner. Neither of us were starving, but we knew we needed something. Bobby decided to have left over burgers, but I was in the mood for something lighter… smoothie bowl to the rescue! :)

7:00 – Dinner

I blended together:

  • tons of frozen spinach
  • 1 scoop cookies and cream protein powder
  • 3 tbsp. PB2
  • 1 1/2 cups Unsweetened Almond Milk
  • 1 Truvia
  • dash of cinnamon

It hit the spot! :)

We showered off all the sand, gobbed aloe all over our sunkissed faces, and climbed onto the couch to catch up on some TV. It was a perfect day with lots of relaxation, sand and sun!

  1. When we go to the beach.. I usually make sandwiches.. and then pack lots of fruits, waters.. and something crunchy!! Fruits always seemed to be craved on a hot beach day! :)

    Loving that shrimp tho.. it has been TOO long since I’ve had shrimp! I need to get on that!

  2. that shrimp makes me drool, one of my favorite foods alive. I haven’t had it in forever. hope you are loving the beach!

  5. I’ve never added edemame to a salad but it looks delicious and so refreshing! Usually if I’m going to the beach I’ll pack a sandwich and some watermelon.

    My favorite smoothie ingredients are a frozen banana, pineapple, and spinach. The frozen banana make it nice and creamy!

  6. I LOVE edemame! It is so delicious and hits the spot every time I eat it! ….I am crazy over smoothies in the summer- ANY smoothie as long as it is thick, huge, and cold!
    Your day at the beach sounds just so wonderful- I’m wondering what people would think if I was out at the beach trying to catch some rays right now ;)

    The best thing I ate was a smoothie! Tons of spinach, milk, and chocolate peanut butter protein powder. I loved it! Where did you get cookies and cream protein powder?

    Looks like such a relaxing day, good for you for making such healthy choices while on vacation! Most people use that as an opportunity to splurge. When I go to the beach or pool, I’m all about snacking on fruit! Not only is it hydrating but it cools you off on a super hot day!

    When we go to the beach we pack lots of fruit, low fat string cheese, pretzels, almond butter and sandwiches. :)

    I love smoothies with milk, chia seeds, spinach, vanilla, frozen bananas and peanut butter! That’s my absolute favorite combination.

  14. Love your photo of the apple at the beach! My favorite smoothie ingredients are frozen spinach, froazen banana, frozen blueberries and water plus a dash of vanilla.

  15. Mmmm that shrimp cocktail looks awesome! Lately, I’ve been all about putting bananas into smoothies … which is weird, because I hated bananas until about a year ago. Maybe I’m making up for lost time? I don’t know what it is … but I can’t get enough!

  18. when i’m at the pool or beach – i love apples or salads, something light for sure because the heat takes away my heavy appetite & plus i’m in a bikini and that’s motivation enough to eat clean & light!

  19. Fruits have been my go-to snack on hot days, and while I usually prefer red over white wine, white has been my choice with the hotter temps too!
    The best things so far…Brownie Batter Oats, Peanut Butter Cup Oats, and Greek Yogurt Topped Sweet Potatoes!
