W.I.A.W: The last week of school!

Happy, happy Wednesday friends!!! :)

I hope everyone’s week is flying by like mine is. It’s the last full week of school, so I’ve got tons of things to get done and it’s making my week shoot on by! No complaints from this tired teacher, that’s for sure. ;)

 Let’s jump right into What I Ate Wednesday, courtesy of the lovely Jenn at Peas and Crayons! Check out her blog for all the WIAW details and to find some awesome other blogs.

8:15 – Oat Bran Protein Pancakes

I had heard of oat bran pancakes before, but I decided to play around with a few different recipes and modify them to add some extra protein! Lemme tell ya, this was a recipe success! :)

  • 3 tbsp oat bran
  • 2 egg whites
  • 1/2 scoop chocolate protein powder
  • 1/4 cup fat-free cottage cheese
  • dash cinnamon
  • 1 packet of Truvia

Mix all the ingredients together and cook over medium heat as you would a regular pancake. FULL of protein, and so delicious! 

10:00 – Snack

Handful of pistachios (recycled picture but I was JUST as happy to chow down! :) )

12:00 – Lunch

Mixed greens, chicken sausage, tons of veggies, and some cottage cheese and lemon juice. Best homemade salad I’ve had in a long time.  I was tempted to lick the bowl clean (it was indoor lunch and my students were around me… otherwise I totally would have.)

4:00 – Snack of unpictured cut up veggies and some onion dip (made with Chobani greek yogurt instead of sour cream.)

7:00 – Dinnertime

 

After a long gym session, Bobby and I were both starving when we got home. Luckily, dinner came together in a flash! I drizzled some brussel sprouts with olive oil and sea salt before throwing them in the oven for about 25 minutes to roast. While they were cooking I broiled some salmon. A sprinkle of sea salt and pepper on top before putting it under the broiler until it looked cooked to my liking! Easiest and tastiest recipe I’ve found yet! :)

8:15 – Dessert

After dinner I wanted something to satisfy my sweet tooth but not ruin all the hard work I had put in at the gym earlier. Arctic Zero Ice Cream to the rescue! I still have a hard time believing the nutrition stats, but I guess it goes to show you some things are too good and ARE true! I had a few spoonfuls of this before settling down to relax with Bobby and catch up on some TV.

  1. I’ve eaten so many good things this week, I don’t know how to pick!! But probably my amazing dinner Saturday night, which included a warm apple blossom with ice cream. Or perhaps it was the strawberry milkshake with a balsamic reduction on Sunday haha. Geez, I need to get the gym! ;)

  7. I’ve never heard of Arctic Zero; it sure looks great though! :)
    My favorite snack has to be nuts & seeds (http://eatandgetmoving.wordpress.com/2012/06/13/what-i-ate-wednesday-sensible-snacking-nuts-seeds-loverrrr/) I just mentioned them today :p

    I eat Greek yogurt with stevia and some topping as a ‘sweet craving calmer’ :) I love yogurt!

  10. Pancakes are one of my all-time favorite breakfast foods, but I rarely take the time to make them for some reason! Seeing the pic of yours is totally making me crave them! Thanks for sharing the recipe, it sounds like a great one. I think I know what I’m having for breakfast tomorrow….

    • I rarely take the time to make them too! I actually made mine the night before and ate them cold once I got to work… they were actually REALLY good cold. Let me know if you try it! :)

  11. Favorite snack of all time I don’t think I can pick! Does pinkberry count?! I love arctic zero too! The first time I got it I kept checking the nutrition label, doing math, trying to figure out what I was missing because I couldn’t believe it!

    Oh man when my sweet tooth fairy visits, I must stop everything that I am doing and greet her. Otherwise, I get punished by filling up on all those other junk food that never satisfy. Ice cream is my biggest weakness, and there’s always a carton (or two or two ^0^) in my freezer all 365 days.

  13. Enjoy your last week! Pretzels dipped in cottage cheese sounds so good…I’ve never tried it and now definitely must. My husband had a day off work today and we made pancakes this morning. Best of the week so far!

    I was always skeptical of the nutrition too, but if you look at the ingredients its really just a frozen protein shake.

  18. Summer is getting soooo close for you! YAY times a million!! ….I should give those protein pancakes a go soon- my roommate when I lived in NY, that was a fitness show contestant, lived by those things. I don’t know how I never snagged one!

    • You really should!! My husband has been making fun of my weird protein pancakes for a few days now but as I was making them tonight for breakfast tomorrow he snuck a bite and I made him eat his words! ;) . I think he may be a fan now, too!

  22. Love Arctic Zero! I recently started eating it- I think my favorite flavors are Vanilla Maple and Coffee! :) Haven’t tired the mint chocolate yet! WF just started carrying more flavors tho!

    And YES! for the last week of school! I am there too! :) Tomorrow is the last day!

    I keep looking for that icecream and I haven’t found it yet! So I satisfy my sweet tooth with a Skinny Cow ice cream sandwich (140cal).
