The last few W.I.A.W. of the school year!

Hi guys! It’s Wednesday, and for once, I’m kind of wishing the week would slow down. I have 8 days left with my kiddos before summer break, and I’m trying to enjoy it rather than wish these last few days away.

Of course, I say this at 6 a.m. before I’ve had the pleasure of spending 6 precious hours with my class! Let’s see if I feel the same way after hours of tattling, yelling, fighting, etc. ;)

Anyway, I missed last week’s What I Ate Wednesday, and I’m happy to be back! Especially because this month is focused on one of my favorite things…. SNACKS!

I have to be especially careful with my snacking, because they are something that I adore and can find myself going overboard with. I love snacks of all kinds… pretzels, nuts, veggies, hummus, yogurts, smoothies… yum.

Now that I’m really trying to get myself back on track after the past few months of indulgences, I need to be more mindful of my snacking. On one hand, I need snacks to keep my hunger under control between meals, but on the other hand, I don’t want to go overboard. I kept all this in mind as I packed my meals for Tuesday!

8:15 – Breakfast

Kombucha Gingerade, a Gala apple, and a Cliff MOJO bar. Packed this up and eaten at my desk before my kids barged in the classroom! This actually did a pretty good job of holding me over, so I skipped eating the baby carrots that I had packed for a mid-morning snack.

11:45 – Lunch (recycled picture, but the same exact deliciousness)

For lunch, I chowed down on a Flatout wrap with hummus and kale and a side of TLC crackers. I also finished off those baby carrots that I was supposed to have for my snack earlier.

3:00 – After school snack

I was dreaming of this smoothie bowl the entire ride home! Chocolate protein powder, frozen spinach, unsweetened almond milk and some Fiber One cereal for added crunch on top. It was everything I dreamed of… :)

7:30 – Dinner

After a great workout at the gym of a heart pumping cardio session followed by a tougher than usual Bodypump class, I wanted something quick, easy, and healthy! We had some ground turkey in the fridge, so Bobby and I whipped up some turkey tacos. I had one taco on a wrap plus some salad with all the taco fixings on the side. Mexican just might take the cake for my favorite type of food. I could have devoured more, but I stuck to this plate before I packed up the rest for my lunch today!

After looking at my eats, I realized that I actually didn’t “snack” much today, but I think I did a good job of spacing out my meals and not letting myself get too hungry throughout the day. Success! :)

  1. I never thought to try Fiber One in my smoothies. Sounds good. My favorite snack right now is Larabars and fresh fruit. Hands down Mexican is my favorite. In fact, I think I’ve eaten it everyday for the past 2 weeks. I eat 5 times/day. 3 meals and 2 snacks.

  2. I like to top my smoothies off with cereal too, adds a nice different texture and helps with satiety! I am a fan of mexican, but only certain items- tacos and enchiladas are my personal favorite!

    I love mexican food, but I think my favorite type of food is either greek or sushi (I know that’s not a “type,” but you know :) )

  5. We had tacos – but we ground chicken! I’ve never made them with that before and it was delicious!

    I love those Kashi TLC crackers! I ate them every day with lunch at school. And way to get back on track with the healthy eats :-)

  8. i usually try to stick to 3 meals and one or two small snacks, especially if i stay up late at night..my favorite late night snack has been a bowl of cereal!

    I absolutely love greek food, although sometimes I definitely crave Mexican and won’t be happy until I fill my guac quota! I definitely snack throughout the day, similar to you I usually have a morning snack and an afternoon snack. btw your food looks supper yummy!

  11. You’ve got the right attitude for suer- enjoy the last few days with your kids and have fun. It is such a hard balance between fun and not letting them go wild, because they go from zero to crazy in .00006 seconds flat! :) Oooo, don’t we have amazing jobs!
    I have this bad habit of snacking on a piece of chocolate here or there- I’ve GOT to cut back. But, I just like it soooooo darn much. You’re doing a great job of getting back on track!

    • Ugh…. So true about the kids going crazy. If we get too lenient with them they go NUTS! I guess I don’t blame them though, but it doesn’t make the headaches any easier to deal with!
      By the way I honestly just had a internal struggle about whether to eat a chocolate donut … So I know how you feel. I held back though and I went for my carrots instead!

  15. Yum- your turkey tacos look great! I snack during the day– probs twice. I can’t seem to make it from lunch all the way to dinner without one! Hope the last few days of school go well!

  18. I love Clif Kid ZBars for a healthy snack, but at night I love something like a Dark Chocolate Surprise as I call it (banana, avocado, vanilla, cinnamon, and cocoa powder). Tastes like brownie batter. :)
    I love Italian and Mexican, but I can also eat sushi all the time and be happy!
    Snacks – mid afternoon before a workout and after dinner I need to end my night with a sweet!

  19. I snack my face off. So much so that it’s gotten to be a wee bit of a problem. I need to remember what it’s like to eat meals!

  20. I love Mexican food! We make turkey tacos a lot, and they are always quick, easy, and delicious. I am actually not a big snacker, but when I do I like peanut butter on rice cake, fro-yo (when an option!), and pickles when I am craving salt!

  22. Lately I’ve been enjoying apples or watermelon for my fruit snack and protein bars for my afternoon pick me up. I recently discovered a s’mores bar that makes me very happy :)
