Happy Wednesday! Half way through the week, folks!
This week is slowly progressing for me, as it always does after a week off. For some reason, it takes me at least a week to get back into my routine, and this week seems to be worse than usual! Top the week off with a trip to Las Vegas, and you have one very tired teacher. Luckily, my students came back from break ready to learn, and they are making this week much easier for me!
After a weekend of late nights, cocktails, and 5 A.M. pizza , I was ready to welcome back a bit more balance in my life! I was craving veggies like mad, and thanks to Jenn from Peas and Crayons, I’ll be sharing that with you through What I Ate Wednesday!
8:00 a.m. Kombucha Gingerade, Gala Apple & a Clif Mojo Bar
I usually do my food shopping on Sunday afternoons, but being that I was flying across the United States at that time, food shopping never occurred. There were slim pickin’s for my breakfast on Tuesday. Yes, I could have just gone Monday afternoon, but quite honestly, I couldn’t gather up the energy. Does anyone else feel like food shopping takes a whole lot of motivation? I love it if I have the time to browse, but when I’m hungry or tired… forget about it. Anyway, I managed to put together this quick and easy breakfast, and it actually did a great job of holding me over until lunchtime!
11:45 – Hummus and kale Flatout wrap with Kashi TLC crackers on the side
Again, kind of scrounged this up, but it did the trick! I also enjoyed some baby carrots that were in the teacher’s room.
2:00 – Unpictured pistachios that were scarfed down while filling out report cards!
4:00 – Chocolate Protein Smoothie with lots of spinach!
By the time I got home from work I was craving something green and healthy like craazyy! I blended together frozen spinach, unsweetened almond milk, and chocolate protein powder for a delicious, healthy snack!
7:30 p.m. – Kale salad with Boca Burger
When dinnertime rolled around, I was still craving veggies (my body is trying to make up for the lack of this weekend)! While Bobby grilled himself a steak, I made a Boca burger for myself. I crumbled it over a huge bowl of kale, and then drizzled it all with some olive oil, sesame seeds, and sea salt. Delicious combo! The salad was the size of my head, but I was still wishing I had made myself some more. Next time!
8:45 – Margherita Crackers
I still wanted something to snack on after my dinner, and luckily I got a special package in the mail that I was excited to dig into!
I promise I’ll fill you in later, but for now, I’ll leave it at these being ahhhmazing.
All in all, I think I successfully got my veggies in!

It is so hard to get back into the swing of things after break- glad your kids are making it easier on you though! My kids are in some sort of yucky funk this week and it is making this the slowest week of the year! Yipes, kiddos! Tomorrow will be a better day though, I just know it!
…..I crave vegetables a lot! I go a tad nuts if they aren’t incorporated into every meal and snack other than breakfast—- and I also crave a whole lot of chocolate all the time!
Oh I know the feeling with kiddos being in a funk! Isn’t it the worst? And then it makes ME fall into a funk and it just a bad thing all around! Before break my class was like that…. I kinda wanted to shoot myself by 3:05 everyday. Hopefully your week gets better tomorrow! My fingers are crossed for you!
It always feels good to get back to eating the things I normally enjoy after a vacation for weekend away. As much as I love indulging during those times, I’m always a little relieved to get back to feeling energized and healthy again
Good job on finishing up those report cards! We just did our last progress reports: next is the end-of-year grades!

I love those Kashi crackers! I definitely crave nutrients after indulging on the weekends. I’ll start Sunday night actually, I usually drink a bunch of water/smoothie to start off fresh before the work week even begins. And I wash my face. That’s not food related but I feel like it helps with the clean slate
Haha I’m the same way with washing my hands…. Something about it makes me feel a million times better… I thought it was a strange habit, glad I’m not alone

I also hate food shopping when I don’t have time to enjoy it. It’s nice to be able to browse around, look at the labels, and try new foods (especially at the farmers market, haha).

I’m not as creative as you are when I’m packing lunch for work.. Yesterday was kale leaves with balsamic and coconut oil ‘sauce’ with a side of chickpeas, nothing as bright as yours.
I guess we all have to get dehydrators to get our snack fix in. Haha.

Definitely a strong veggie filled day! And I think I’m the only food lover out there who actually HATES grocery shopping. Although I think it’s more to do with shopping with two kids than anything. Haha!
Also – I miss Boca burgers. They’re so good but I have had to give up soy with my thyroid issues.
I seriously can’t imagine how much I’m going to loathe grocery shopping when I have kids…. oh man. I admire you!
