W.I.A.W: Spring Break!

Happy Wednesday, friends!  Most of the time when it gets to this part of the week I’m thrilled because it means the weekend is right around the corner…. however, being that this week is my spring break, I wouldn’t mind if it slowed down just a bit! :)


Anyway, I’m running around like a crazy person trying to get everything ready for VEGAS (!!!!!), so let’s jump right into What I Ate Wednesday (courtesy of the fabulous Jenn).  Following my goals for April, I’m switching things up this week!

7:30 – Kombucha Gingerade and Tina’s 3 Ingredient Apple Cinnamon Pancakes (with PB2 drizzled on top)

The first time I made these, I ended up making them look like a complete mess (although they still tasted amazingggg), and I’m proud to say I managed to make them look somewhat more appetizing this time!  It was still a bit difficult to flip them, but they were much less messy looking then last time.  They are delicious and so easy, I recommend you try! :)

11:30 – Blueberries and Cream Spinach Protein Smoothie

Lunch (Part 1)

After a good workout at the gym, I was starving, and wanted something quick and satisfying!  I blended together Almond/Coconut Milk Blend, frozen spinach, Blueberries and Cream Whey Protein, and a packet of Truvia.  I sprinkled some Fiber One on top for a little crunch.  It was exactly what I wanted!

3:30 – Flatout Wrap with hummus and kale

Lunch (Part 2)

After showering up, I headed out to a hair get my hair colored and cut, and I knew I would be there for a while.  I didn’t want my stylist to see the wrath of Alyssa when I’m hungry, so I brought this to snack on!

7:00 – Chicken, veggie, and walnut stirfry (not the actual picture, but it looked very similar!)

I hadn’t been to my mom’s in a while, and was craving some downtime with her and the rest of my family, so I headed down to her house for the night (and of course, forgot my camera).  She made a delicious stir fry which we enjoyed alongside some red wine.  It was exactly the kind of night I needed! :)

And now, I’m off to pack up for our big weekend!  Have a great night! :)

  2. Looks like a day of delicious eats! …..The weeks away from school seem to fly, don’t they?! Have a blast in Vegas!

    • Yes! I had all these plans for what I was going to accomplish this week but somehow tomorrow is already Thursday and there is no way I’ll be doing anything productive in Vegas! ;)

  3. I’ve never thought to use frozen spinach for a smoothie. Why have I never done that?! Smart, smart, smart. That would save me from buying so much fresh stuff!

  7. I will definitely be trying that smoothie soon! Best thing I’ve eaten this week? A wrap with roasted chickpeas, arugula, tomato, avocado and a bit of Frank’s hot sauce.
