Hi friends! Before I get started sharing my eats (thank you to Jenn for hosting this awesome party that I look forward to reading/writing each week
), I want to go over some goals I’ve set for myself for the month of April. I’m a big list person, and I’m always looking for ways to improve myself, so I figure blogging my goals will help with the accountability!
April Goals 2012
- Be more patient with my students. I feel like recently I’ve been getting very impatient with my kids. Just because I spend 6 hours a day, 5 days a week with the kiddos doesn’t mean that I have the right to take out any aggravation or frustration on them. Just something to keep in mind!
- Make sure to keep up with my calorie needs before/after a long run BUT keep it up with healthy foods. I tend to fall into the “reward myself with junk food” trap easily (hence the pizza and frozen yogurt that has popped up the past few weekends). I just don’t want it to become a habit, and I’d like to keep that stuff as treats.
- Chill out!!!!! I worry about everything, and I’ve noticed my anxiety getting worse recently. Some hard stuff has been going on with my family and I just need to accept that not everything is in my control. Sometimes I just need to go with the flow….
and last, but certainly not least….
- Switch up my food choices. Clearly, I fall into ruts, and I stick with what I know. From now on, this will be the last apple and peanut butter mess breakfast you will see for a while. I’m also going to try to add more variety to my lunches as well.
That being said…. Happy W.I.A.W! :) Now it’s time to check out my eats….
7:30 A.M. – Kombucha
8:15 A.M. – Apple Slices and PB2 Peanut Butter Mess

10:00 A.M. - Cucumber slices (unpictured)
11:45 A.M. – Whole wheat wrap with turkey, sprouts, and kale. Arugula and green bean salad on the side!
Hello Halloween plate that I found in my drawer!
2:00 P.M. – Tea and pistachios while grading mounds of papers during my prep.
4:00 P.M. – Spinach, chocolate protein powder, and Almond Milk smoothie (Looks nasty, tastes like a chocolate milkshake).
7:00 P.M. – After a run and Bodypump, Bobby and I threw together a quick dinner of chicken, roasted green beans (tastes like french fries… yum), and some TLC Pita Chips on the side.
8:30 P.M. – Some spoonfuls of this Arctic Zero “Ice Cream” with some tea. Has anyone else tried this yet?
There ya have it… and next week, I promise… you’ll be shocked with some variety! ;)
What are some April goals you’ve set for yourself??
Anyone have any good ideas for an Easter appetizer?
Edited to add: I have a VERY exciting event that I just found out I’ll be attending tonight! Hint: I’ve mentioned this type of event in past blog posts! Any guesses??? First person to guess correctly I’ll bake you my famous chocolate chip cookies and ship them to you ASAP!











Great goals! I need to look at that last one pretty darn close- I have noticed my anxiety getting so much worse in the past few years, it is so unlike me to be like this. I need to get back to the ‘Julie’ that can handle things and just works through life instead of the uptight worrywart!

Yes! The past two years I’ve really struggled with anxiety, it comes and goes, but geeze…. it’s horrible! I’ve found that taking time to myself (going for a walk, reading a book, getting a manicure
) really helps calm me down and I’ve learned to listen to the signals that I’m getting really anxious (for me it’s a huge knot in my stomach and I get a very spacy feeling). Thanks lady!

Baked Brie cheese in a puff pastry, served with fruit and crackers always makes an easy and delicoius appetizer … I’m sure you could find a million recipes with a google search.
Love the roasted green beans! I think roasting any veggie makes it better!!
Thanks for the suggestion! Baked Brie is usually my go-to appetizer as well, unfortunately I love it so much I end up eating a lot of it myself! Trying to avoid that this weekend

I love arctic zero! The vanilla maple is my favorite kind – it has a creamier, more ice cream like texture
I’ve never seen that kind! I’m going to have to search it out though!

Have to try some of that arctic zero! been hearing great things about it! and that synergy kombucha is amazing! replaces my cups of coffee sometimes!
I honestly have stopped drinking coffee now…. And I was addicted! Its amazing!
First of all I have to tell you that you have me hooked on pistachios! When I saw them on your WIAW a couple weeks ago, I picked some up at the store and have been eating them as my after school snack every day
Hmm – I’m going to guess a bridal shower or engagement party for tonight because I’ve read so much about weddings here… and I LOVE it!
Haha I’m so happy you are sharing my addiction to pistachios! I have literally eaten more in the past two months then ever in my life…. It’s insane.

I think my major goal is to get back to 8 hours a sleep every night, perhaps I need to chill on the coffee hehe :]
Yes more sleep should actually be on my list too! I try, but once my mind starts wandering its all over….
That protein shake drink sounds awesome. Do you put any ice in it?
Nope, no ice! I use frozen spinach though and that does the trick! I also put a packet of Truvia and some cinnamon in it…. So yummy!
