Happy Wednesday!
I’m off running around trying to get ready for what is going to be a very busy (and very fun!!) weekend, so let’s jump right into it…
Here ya have it… my Tuesday eats… check out the rest of the lovely Jenn’s W.I.A.W. posts on her blog here!
7:30 A.M. – Kombucha (yes, a recycled picture)
8:15 A.M. – Apple slices and my peanut butter pumpkin mess!
I’ve made a few simple changes to this bowl of goodness, and now I recommend it even more!
Into my bowl went:

3 tbsp. PB2
-
1/4 cup pumpkin
-
1 packet truvia
-
1/2 tsp. cinnamon
-
splash of Unsweetened Almond Milk to mix it all together
Mix it all together and slirp it on down.
10:00 A.M. – cut up cucumber used as a scooping device for garlic hummus (unpictured because I didn’t think it would exactly be appropriate to whip out my camera during snacktime.)
11:45 A.M. – Turkey Taco Salad
This might not look appetizing, but it sure tasted delicious. I topped some mixed greens with leftover Turkey Taco meat, a couple spoonfuls of greek yogurt (I prefer to use that over sour cream… added protein, and tastes the same!), and a some salsa. I enjoyed a whole wheat wrap on the side for scooping it all up!
2:00 A.M. – Prep time Pistachios and tea (yet again!) plus a few Hershey’s Kisses (left over from our Clean Desk Pet’s visit).
4:00 P.M. – Green Blueberries and Cream protein smoothie
Blended all together and enjoyed in a very springtime wine glass (flip-flop season is here!!!).
7:30 – Sushi Takeout
It’s very rare that Bobby and I order takeout during the week, however, after a run and Bodypump (for me), and lots of lifting iron (for him), we were feeling tired, hungry, and indecisive. Sushi to the rescue! I ordered a Naruto Roll (tuna sashimi wrapped in cucumber instead of rice) and a Veggie Combo Roll with brown rice. We shared some edamame on the side. Delicious, healthy, and most importantly… quick!
Now here’s where your help comes in….
I’m quickly coming to the conclusion that I have a problem with variety. I know what I like, and I have my go-to meals that pop up day after day. I’m in need of a new breakfast routine, bigtime! If I don’t start switching up my breakfasts pretty soon, I know I’ll get sick of it… and then I’m outta luck. I need something that I am able to carry with me to work in the morning and is easy and healthy.
Anyone have any breakfast ideas they could share?

That smoothie and the sushi look so good. I haven’t had sushi in forever, I might have to change that!
I feel like sushi and smoothies are such warm weather food! I can’t get enough recently!
Kombucha, I have not had one in ages! But I do love them! Especially good when you are sick. During the work week I have Kashi Heart to Heart cereal mixed with Chobani! And I have been bringing a green monster to work as well. I make it the night before throw it in the fridge and when I wake up I put it in the freezer to make it extra cold while I get ready. On the weekends I usually have eggs and toast!

Thanks for the suggestions! My last breakfast obsession was chobani and cereal too, I think I overdosed. The green monster sounds is a great idea though, I never thought about making it the night before! Thanks!
That sushi looks great. My friends and I recently took a veggie sushi class and then had our own little sushi making party. It was much easier than I had imagined!
As for breakfast, I love eating quinoa as a porridge. There are so many ways to mix it up, so I rarely get tired of it! If I want something really quick I have whole grain waffles with yogurt and berries, bananas or any other fruit I have on hand.
Thanks for the suggestions… I’ve never tried making quinoa myself, but I might look into that. A veggie sushi class sounds awesome! I would love to do something like that… how did you find that class??
They have classes at our local organic food co-op. Our instructor was a chef at a local vegan restaurant. The class only cost $15 and it was totally worth it, considering we ate at least that much worth of sushi!

I got burnt out on yogurt and granola for breakfast too – that’s what I took the entire first trimester of school. Now I have either toast with PB and banana, oatmeal, or an egg sandwich (I usually eat in the car while I’m sitting in traffic). I am hoping to try overnight oats sometime in the future though!
I used to eat in the car too, until some cop (who was a complete jerk!!!) gave me a ticket for taking a bite of my yogurt while I was stopped at a red light! Watch out! I’m thinking I might need to try overnight oats soon, too.
Your blog looks great, btw! I’m a big fan of oatmeal for a rushing-out-the-door breakfast. Easy to transport and even reheats well if that suits your fancy
And that peanut butter pumpkin “mess”… Um, sign me up for some of that!

I see PB2 on so many blogs, but I still haven’t tried it…I need to!
Oh you have to! I honestly think it is better then regular peanut butter and it only has 1.5 grams of fat for every 2 TBSP (so I don’t feel as unhealthy when I eat numerous servings a day). Only downside is that it is a bit on the pricey side!
I’m so boring I eat yogurt for breakfast every day! But on the weekends I like to mix it up. I’m a huge fan of hash-potato, veggies, egg and a protein. On Sundays sometimes I make a little extra for week day breakfast. Hash is also good rolled up in a whole wheat tortilla-portable!
I like to mix it up on the weekends, too. Somehow that makes me feel better about having the same thing every.single.day of the week.
Breakfast is my favorite meal! Tuesday I posted a recipe for raspberry baked oatmeal to-go. They can be made ahead and stored in the freezer for a quick breakfast or snack.

I am pretty boring with my breakfasts during the week and usually stick with the cereal, overnight oats, smoothie bowl rotation, mostly because of time restraints. Weekends though I am all about a yummy brunch of pancakes and omelettes! I look forward to brunch every week
